Freaked Misako out when—after showing me this video and mentioning she might make it some time this week—I walked out of the kitchen with it five minutes later. I didnt have any negi or scallion but I used a some shiso (perilla) leaves instead as thats a classic combination with ume (pickled plums are, after all, made with shiso). Subbed shaoxing wine for sake, as it was in front of me. Little extra rice wine vinegar. Added some shichimi* for a bit of bite. Secret ingredient (隠し味) was high-quality dashi powder mixed through for an umami bump. Not bad for five minutes work. *shichimi togarashi (七味唐辛子) is a pepper mix of seven ingredients including dried mandarin peel and hemp seed that is often served with yakitori among other dishes.
