Fresh Pappardelle with Roasted Chicken and Broccoli Rabe Inspired by Giada De Laurentiis Ingredients: - 1 lb boccoli rabe, washed and cut into 3 inch pieces - 1 lb fresh pappardelle - 2 garlic cloves minced - 16 oz chicken broth - lemon (1/2 cup fresh squeezed) - 1 5lb roasted chicken (You can roast your own or cheat by purchasing a store bought depending on time) Shred roasted chicken to yield 4 cups - 1 cup fresh locatelli cheese - 1/2 cup toasted pine nuts - chopped parsley to taste - good quality extra virgin olive oil - fresh ground pepper - salt Bring pot of salted water to boil. Boil broccoli rabe @2 min until crisp but tender. Transfer to bowl. Add pappardelle to same pot of boiling water for 2 min. Stir so pasta doesnt stick. Reserve water to add to finished dish. In another large skillet, saute garlic. Add broth and lemon juice to boil and reduce by 1/2. Add the shredded chicken and warm through. Add the cooked pasta, broccoli rabe, parsley and oil. Toss; add reserved pasta liquid to moisten. Season with salt and pepper. Add additional cheese to taste.
