Fresh Rhubarb pie: 1 1/2 lbs fresh rhubarb, diced (about 4 cups) 1 1/2 cups sugar 2 tbsp. flour 1/8 tsp salt 1 tbsp. butter 2-3 tbsp. water Wash and cut up rhubarb into a bowl, add 6-8 tbsp. water. Mix flour, sugar and salt. Sprinkle half of this over your pie crust lined pan. Add rhubarb, sprinkle on remaining flour/sugar mix and dot with butter. Put on pie crust top and flute the edges. Vent top with knife. Bake at 450 degrees for 10-15 mins, then turn oven to 350 degrees for 25 mins or until bubbly
