Given that I shall soon be spending a couple of weeks with Cate Mason, a committed vegan, living in intimate proximity and making use of the same chopping board, being a man of accommodating intention I believe that it is my duty to try to understand and empathise with her point of view.... ...Lettuce. I dont really know much about lettuce: How theyre bred, reared and murdered, but I do know that, in the Sainsburys vegetable aisle, the Iceberg lettuces have grown progressively smaller over the past few years. I put this down to global warming. For all of their diminishing size, I do believe that the lettuce is the proper backbone of a green salad. A collection of weeds that can be made palatable with the addition of Paul Newmans Salad Dressings. So.... A big up to the lettuce, with Newmans assistance.
