Good Morning Facebook and Happy Friday!!! Today our Spotlight is the one and only Manuel Sr and his Beautiful wife Emma!!! One of the reasons that Manuel’s El Burrito exists today is because of its founders, Manuel and Emma Gallegos. They started the first restaurant back in 1976. With their hard work and determination, Manuel and Emma crafted recipes and combination plates that are still served today. The restaurant started as a family business, and almost everyone who worked at El Burrito was related. Still to this day, you see 3 generations of the Gallegos family working side by side at Manuel’s El Burrito. Manuel and Emma have been married for nearly 57 years, and they have 6 children, 18 grandchildren and 10 great-grandchildren. Theyve lived in Clearfield and the surrounding area for many years. Manuel served in the Air Force and later retired from Hill Air Force Base. Emma had the hardest job of all, being a homemaker to 6 kids and an extremely busy husband. Manuel and Emma also founded several beauty salons; in fact at one point they had owned and operated a beauty college, and ran ten salons all over the Wasatch front. In their free time Manuel and Emma enjoyed boating & camping with their kids and grandkids. They have a deep Catholic faith, and the most important thing to them is family.
