Heres my Potato Soup Recipe Yields approx 2 quarts Ingredients: 3 Med Potatoes - chopped 1 Small Onion - chopped 3 Stalks of Celery - sliced 1 Small Carrot – grated 1-2 Garlic Cloves - crushed (optional add) 4 Cups of Water 3 Tbsps soft magarine (butter if you don’t have it) 2 Tbsps of all purpose flour 1 Cup Low Fat Milk ( I use Skim Milk) I Cup Half & Half ( I use 5% cream rather than high fat) Salt, Pepper to taste Garnish with Paprika (Optional) Step 1 Add all vegetables to water and cook on medium heat until tender Approx 25-30 min Step 2 Melt margarine/butter in small saucepan and blend in flour. Gradually add Low Fat Milk and cook until thickened, stirring frequently Add milk mixture to vegetable mixture Add Half & Half or Low Fat Cream Add salt and pepper to taste. You can add in other vegetables if you like and just adjust your water levels. I also like to add Red Pepper Flakes to my soup- gives that extra heat.. Very filling soup. Do Not Freeze.
