Hi Everyone, I am pleased to announce our latest location on out Paleo Way Tour is …. DARWIN. We are so excited to bring this tour up to one of my all time favourite places in Australia and can’t wait to meet you all. Lauren Clark Carols story is another positive reason why I am glad I have decided to follow the Paleo approach to my diet. People couldnt understand what or why I was doingit at first, but they are all starting to question and slowly it seems I am making an impression! While I cant say that I had a severe illness, I can completely resonate with her story in that my life has only become better since making better choices regarding my diet and health. My mother recently died of early onset Alzheimers Disease, and anything I can do to assist my body to prevent such a cruel disease is something I am willing to try! One thing that really struck me was her desire to look at not only her diet but other products in her life. I am a very firm believer that there are too many toxins in our lives, and try to live as cleanly as possible - from personal care to house cleaning. Since changing my diet to a more clean approach I have so much more energy, am able to complete my full time job (teaching special needs students) and my other full time job - mother to a 2 year old boy!! I have had less illnesses too - in my line of work it always seems that there is one virus or another going around, but this year I have been relatively illness free and feeling great for it! As I research more and more about Paleo eating I learn so much about my body and find an understanding of how to live a life of PREVENTING illness, not just curing it as it appears. I am loving your cookbooksChef Pete Evans - my favourite recipe from Family Food would have to be the butter chicken! The whole family loves it... and even tried it on some friends recently who couldnt get enough! I am so confused as to what to feed my family with so many perceived healthy foods actually being harmful I am feeling overwhelmed. Pete your Fish Tacos with Celeriac Remoulade certainly helped me to realise progress is possible as surprisingly my husband and kids loved them! Your lettuce cup wraps were also a hit in the lunch boxes - and a talking point in the classroom! With baby steps and your help Ill be able to help my son with his behaviour fluctuations, my husbands digestive issues and my community through demonstrated positive change. xo Jacqui Soliman What resonates with me from Carols story is that her turning point began with the realisation that her thought life was destructive and that it was a choice to be happy even if she wasnt well. This really resonates with me in 2 ways. The first is that although I know the right foods to eat, I have learnt and studied a lot about nutrition over the years, I have - truth been told - been a clean eating yo-yoer. I recently realised just how much my eating choices are tied to some unhealthy emotional patterns and thoughts... which I have began starting to address. The second is that its really come to a point with one child in particular where its clear certain foods dont agree with him, and for his healths sake we need to adopt more of a paleo diet. Yet the overwhelming thought of what on earth will he eat has kept me hesitant from launching head first into the change. How Carols story resonated with me here is that I need to make the choice to eat well for me and my family even when it feels hard and like a battlefield! I dont own Family Food yet, I am hoping Santa brings it!! But because you have so generously shared some recipes I can say I absolutely loved the butter chicken, and the sushi is the next on the list to try, as we all love sushi! Tammy Alker Ive ummmd & ahhhhd about writing my reason for choosing the Paleo way to change my life. One reason is,after reading so many peoples stories that I actually caused the problems Im having. The other is Im embarrassed & no one knows but my husband and Im scared of being judged. But maybe it will help me by just getting it out there. Ive always had a fear of gaining weight which was preached to me growing up. I starting using laxatives 19 years ago. Im 39 yrs old now. Ive had 4 children and people always said how good I looked. Little did they know back then I took up to 80 laxatives a day & followed a low fat diet or ate hardly anything. A couple of years ago I told my husband & knew I had to try to stop but was so scared of gaining weight & also would I be able to go to the toilet like a normal person. Ive cut down now to 4 laxatives a day and since Ive read your cookbooks & information I hope I can finally end this cycle. Ive been following the Paleo way for a little while now and love it but I know my gut needs a lot of help to get normal again. Im terrified that one day I might need medical intervention to get my bowels right again.I would love the chance to get the help I need to have a normal life & finally after all these years I might be able to stop worrying about my body issues which plagued me everyday. Wow, just writing & admitting this out loud makes me want to cry with embarrassment. Thank you so much Pete & Nic for everything you are doing to make people aware that we can change our lives just by cutting out all the crap & getting back to basics Breakfast burrito (SERVES 4) 1 tablespoon coconut oil or other good-quality fat 300 g beef mince 1 teaspoon ground cumin ½ teaspoon ground coriander ¼ teaspoon chipotle chilli powder ½ teaspoon onion powder ½ yellow capsicum, diced 1 tomato, diced 4 Coconut Flour Tortillas 2 handfuls of wild rocket 4 boiled eggs, peeled and quartered CHIPOTLE AIOLI 250 g (1 cup) aioli 2 chipotle chillies* in adobo sauce, or to taste 1 tablespoon adobo sauce* AVOCADO SALSA 1 avocado, diced 1 tomato, diced 1 tablespoon finely chopped red onion 2 tablespoons chopped coriander leaves juice of 1 lime 1 tablespoon extra-virgin olive oil sea salt and freshly ground black pepper Coconut flour tortillas 3 tablespoons coconut flour 3 tablespoons arrowroot* ¼ teaspoon baking powder ½ teaspoon fine sea salt 8 eggwhites from large eggs 2 tablespoons coconut oil Melt 1 tablespoon of oil or fat in a frying pan over medium–high heat. Add the beef, ground spices, onion powder, capsicum and tomato and cook, stirring occasionally to break up any lumps, for 6–8 minutes until the mince is cooked through and the tomato has broken down. To make the coconut flour tortillas, whisk the coconut flour, arrowroot, baking powder, salt, eggwhites and 125 ml (4 ¼ fl oz/1/2 cup) of water in a large bowl to make a smooth batter. Melt 1 teaspoon of the coconut oil in a small frying pan or on the flat grill on the bbq over medium–high heat. Pour about 3 tablespoons of batter into the pan or on the bbq. Slightly tilt and swirl the pan to spread the batter into a thin tortilla, about 13 cm (5 1/8 inch) in diameter. Cook for a few minutes, or until golden brown, then flip and cook the other side until lightly golden. Transfer to plate and keep warm. Repeat until you have eight tortillas. To make the chipotle aioli, using a hand-held blender, blend all the ingredients until smooth. (Add more aioli if the flavour is too spicy for your liking, or add more chipotles if you prefer the aioli to be extra spicy.) To make the avocado salsa, combine the avocado, tomato, onion, coriander, lime juice and olive oil in a bowl and mix gently. Season with salt and pepper and set aside. Fill the tortillas with a good amount of the beef, spoon on some avocado salsa, then add a drizzle of chipotle aioli and top with some rocket leaves and egg. Wrap up the tortillas and serve.
