I have seen several facebook posts regarding food for the day. I would like to share mine. It is the attempt to create a cake. This all started last nite about 10:30, when I got the idea I had better fix something sweet for my two grandkids that were coming to see me the day after Christmas. It would be the best spice cake known to man. Of course, it would have some modifications. I have always been good about doing things a little different than what has been done by others. Followed directions on Betty Crocker box. I thought I would stray from norm and add some apple pie filling to the recipe. I thought the apples needed to be in smaller chunks, so out came the food processor. What I ended up with was 21 ounces of applesauce. I mixed all of the ingredients with a fork for about a minute, then brought out the cake mixer. Now my mixer has always ran twice to three times faster than anything I remember growing up. It said to run the mixer for two minutes-I only went about a minute. Got my three loaf pans prepared and filled each about half full of the concoction. Into the pre-heated 375 degree oven they went and 26 minutes later I checked on them. Used the toothpick to check for doneness, not realizing the depth of the cake and the length of the toothpick. I know some of you are well ahead of my story by now, but there may be a few slow ones out there, so bear with me. Took the pans out of the oven and placed on top of the stove to cool down. I let them cool for about 45 minutes and proceeded to remove the finished product from the pans. I turned the pans upside down on a plate and was thoroughly amazed how they turned out. We will need a fork and a straw to eat this. The top half looked real good. So, if anybody would like to join us for a after meal dessert, then come on by. It will be hog-slopping time at Mels Diner. The moral of this story is no matter how disastrous things may turn out, dont get discouraged or all stressed out. Just chalk it up as another gallant effort and back to the store, or better yet, the closest bakery. Merry Christmas from me to all of my facebook friends. Hope you have peace in your hearts.
