I usually use this non-stick pan to make my mini cheesecake but recently I used it to make this mini Parmesan Quinoa Bites from wholelifestylenutrition pinterest/pin/72761350199752621/ Here is the recipe: 1 1/2 cup cooked quinoa (1/2 cup uncooked will make 1 1/2 cups cooked) 2 large eggs 1 green onion stalk, diced 1 clove garlic, minced 1/2 cup shredded raw Parmesan cheese 3 tbsp fresh cilantro, chopped 2 tbsp almond flour 1/4 tsp unrefined seasoning salt 1/4 tsp unrefined sea salt 1/8 tsp ground pepper 1/2 tsp fresh lemon juice 1 tsp organic olive oil Instructions Preheat oven to 350 F. Mix together all ingredients. Grease a mini muffin pan with coconut oil. Scoop a heaping tablespoon into each mini muffin spot. Bake for 20 minutes. Serve hot.
