I went to the doctor this morning and she recommended a little less stress in my life. So on the drive home, I began to think of things to start on to reduce stress. I chose to start with lunch...lol. Heres what I did. I went to Whole Foods and purchased some Pane Bella, a cucumber, tomato, radishes, chives, dill weed, and goat cheese. When I got home I sliced the bread and slathered on a layer of Irish Butter. Bright yellow and very sweet and creamy. Then I slathered on a second layer of goat cheese. Had trouble not eating it right off the knife. I sliced the cucumber thin enough to read a paper through, then did the same with the radishes. Each of these vegetables became their own savory, crisp, layer. I put chopped chives and dill on the top, then added thinly sliced tomato. A dash of freshly ground pepper and a nice spray of sea salt, followed by a warm 5 minute nap in my Breville Convection Oven. The pics tell the tale and the meal was superb. Hmmm....the stress is gone. For now. : ))
