IRON SKILLET BACON, ONION BISCUITS 2 cups Hudson Cream all-purpose flour 1 tablespoon baking powder 1 teaspoon sugar 1 teaspoon kosher salt ¼ cup vegetable shortening 1 cup buttermilk ½ cup chopped fresh green onions white and green parts 3 strips ba on applewood smoked fried crisp, patted dry and broke into pieces 1 egg mixed with 1 tablespoon water for egg wash Preheat oven to 375 Combine the flour with the baking powder, sugar and salt in the bowl Add the shortening and mix until a mealy consistency is reached , gradually add the buttermilk, . Add the onions and bacon pieces and mix just enough to blend. Empty the dough on counter and roll to about 1/2 inch thick Cut out biscuits and place in lightly greased iron skillet Brush the tops with the egg wash and bake for 20 to 25 minutes, til firm, if more browning is needed put on broil for a few minutes when done.
