If you need a sweet bite of something in the evening, these energy slices (or you can roll them into balls--thats what I usually do!) are perfect. I change them every time I make them, but I tend to use some combination of peanut butter, coconut oil, seeds, nuts, coconut and dates. They are awesome! These ones had ABOUT: 1 T of peanut butter (would have put more but I had run out) 2 T of coconut oil 1/2 cup of freshly grated coconut 3 T ground flaxseeds 1/4 of a cup of cocoa (this might be too strong for many people--I tend to eat very dark chocolate so I like it) 5 dates (pre soaked--reserve the water to add if it gets too dry) and a few T of grated dark chocolate. Blend it all up, shape into balls (I pressed these ones into a container, then sliced them once frozen) and freeze! This recipe (perfected) and many others will be up on my website when I get it going again....which will be soon!
