Im reading Elizabeth David on the toilet. As one does. Im reading about Sir Harry Luke: As British Chief Commissioner in the Trans-Caucasian Republics of Georgia, Armenia and Azerbaijan he attends a banquet (it is 1919) at Novo Bayazid [now Gavar, Armenia] ; there he eats a species of salmon trout unique to Lake Sevan and called ishkhan, the prince, it is served surrounded by its own amber-coloured caviare, accompanied by a sauce made of the cream of water-buffalos milk, mixed with fresh peeled walnuts... with somewhere a touch of horseradish (a condiment to which Sir Harry appears much addicted) ...the dish was subtly and incredibly delicious...
