In my youth, new businesses were accepted to run in the red for five years before making a profit. small businesses were expected to make 40% profit off of their business. Over the decades there is a widening disparity between cost of living versus earning power. Gratuities or tips were never factored in with wages; it was a side benefit for the employee and in some cases for the employer.
