In their excellent book, Nourishing Traditions, Sally Fallon and Mary Enig have a very healthy and unique recipe for preparing NUT BUTTERS. The recipe is as follows: place 2 cups of nuts, such as peanuts, almonds or cashews along with 1 teaspoon of sea salt in a food processor and grind to a fine powder. Add 2 tablespoons of raw honey and 3/4 cup of unrefined coconut oil. Process until the nut butter becomes smooth. It will be somewhat liquid but will harden when chilled. Store in an airtight container in the refrigerator. This will make two cups of nut butter. For those who like cruncher nut butter add a few partially ground nuts.
