May 25-June 21, 2014, University of Parma, Italy 3 credits (45 contact hours) Application Deadline: Feb. 5 Credit will be awarded to non-Boston College students, both undergraduates and law students, by prior arrangement with the student’s home institution. One of the few courses in the world devoted to the international law of food, an issue of immense emerging importance. The course, which will be held in the city considered the European or even the world capital of food, covers food supply, safety, security, subsidies, trade, and a variety of other contemporary issues. Field trips include visits to the European Food Safety Authority in Parma and the UN Food and Agriculture Organization in Rome, as well as a cooking class at a local culinary institute. There are no prerequisites, and no knowledge of Italian is required.
