Its Bolts Birthday today ! He is all of 1 year old... I have made.... Vanilla Frosted Cupcakes. Everything at room temp Oven preheated to 180 C Makes 12 small to medium cup cakes . I made 6 med to large and 2 small. 115 gm Amul Butter softened naturally 115 gm brown castor sugar 2 eggs lightly beaten 115 gm maida 1/2 tsp baking pdr 1 tbsp milk. Place butter and sugar in a bowl and beat till light and fluffy. Gradually beat in the eggs. Remember , eggs should be at room temp , or they will curdle. Sift the flour with baking pdr, and fold in gently , using a metal spoon. Gently fold in the milk. Spoon, the mixture into paper cases . Bake in preheated oven for 15-20 minutes. Mine got done in 15. Dont over bake or the cup cakes will become dry. Transfer to wire rack and cool . Have used butter icing I use 1 part butter and up to 3 parts sifted icing sugar. Depending on the consistency of the frosting I need . Have added some vanilla extract to flavour the icing. To make the frosting, add the vanilla extract to the butter and beat , till smooth. Sift and keep three times the amount of butter , icing sugar , and gradually keep beating it into the butter. When you have the consistency you are looking for . Stop adding the sugar. Spoon into a Piping bag ..and have some fun icing the cup cakes ! Sorry I could collect only 6 cup cakes for the picture coz they were being demolished , as I was icing. For the two small ones I ran out of icing!
