Kabuli pilau!!!!! Ingredients 2.5 lb Lamb or Beef 1 cup Beef/Lamb stock 2½ cups Basmati rice 1 Onion 1 tsp Garam Masala Half tsp Saffron 1/2 tsp Cumin powder 1 tsp Salt 1 tsp Brown sugar Carrots – 2 thin vertical slices 1 cup raisins Half cup Almonds Half cup Pistachios Half cup Cooking oil 2 cups Water Preparation Fry onions until golden brown in half the oil. Add meat pieces to the fried onion and brown on both sides. Add salt, garam masala and saffron and fry the meat until the oil separates. Add water and bring to a boil. Lower the heat and simmer covered until meat is tender. Add more water if required. Saute carrots in a TBS of oil with sugar. Remove from pan and keep aside. Saute the raisins seperately until they swell up. Fry the almonds and pistachios. Remove meat from the stock and add rice and salt to the stock. Lower the heat and cook covered until rice is cooked. Dam(steam cooking the rice) can be substituted with oven cooking for 15-20 minutes.
