LEMON DRIZZLE CAKE This is perfect recipe if you have lots of egg yolks left over from other things like meringues or macarons!!! I always make a lemon cake straight away, because its so easy and convenient and a perfect birthday present, its great for a tea party, afternoon party, any occasion really!!! Video recipe step by step : youtu.be/QIjU-OZr95Q We will need : For the cake: 4 egg yolks 150 gr of unsalted butter 1 tbsp of lemon zest ( 2 lemons grated) 200 gr of white sugar 1,5 tsp of baking powder pinch of salt 210 gr of flour 3/4 cups of hot water For the drizzle : 6tbsp of icing sugar 1 squeezed lemon Directions : Step 1 : Pre heat your oven to 160 degrees. Step 2 : Sift through your flour and baking powder. Step 3 : Beat your egg yolks by hand or by the mixer until light and fluffy ( might take few minutes) and then slowly add the sugar. Step 4 : Add the butter and lemon zest, and half of squeeze lemon juice and mix it all again. Step 5 : Add the flour and baking powder, mix it all well. Step 6 : Take a baking tray, you can use any shape you like. Make sure its greased and put your cake mixture in. Step 7 : Place in the oven for 30-50 min ( keep checking until its cooked) Step 8 : To make the drizzle, add icing sugar, lemon juice and a bit of vanilla extract. Step 9 : Take the cake out and drizzle the drizzle all over the cake. Sprinkle some icing sugar before serving and enjoy!!!
