La Cucina di Natalinas recipe pictorial....Pasta Broccoli: 1/2 pd.of farfalle pasta, 3/4 cup tomato passata, 3 tblsp. extra virgin olive oil, 1 bunch fresh broccoli washed and cut up, 2 cloves of garlic, salt. Heat the oil in a small pot, add the peeled garlic cloves. Dont brown, just flavour the oil. (my Mom would remove the garlic now) Add the tomato, bring to a boil, simmer about 5 minutes. Meanwhile bring a large pot with 4-5 litres of water to a boil. When rapidly boiling add 1 tbsp. salt, the pasta and broccoli. Stir, bring back to a boil and boil for a few minutes under the recommended time on the box. ( mine was 11 so i cooked for 9 minutes) Drain about 3/4s of the water down the sink. Add the tomato sauce, return to med high heat, stir occasionally. Adjust salt. Heat thoroughly, ensure pasta is fully cooked and remove from heat when desired consistency is received. About 1/2 hour start to finish...grill some meat for a secondo & you have an easy, healthy, homecooked meal. Just like Nonna taught me! Bon appetito!
