Lamingtons 250g softened butter (plus extra for greasing) 300g self raising flour 250g caster sugar 1/4 tsp baking powder 4 large eggs 150g pot of natural yogurt 1 tsp vanilla extract 1 jar of lemon or lime curd (or jam or marmalade) 140g dessicated coconut Heat oven to 180C Grease and line a 20x30cm baking tin. Beat butter, flour, sugar, baking powder, eggs, yogurt, and vanilla together with an electric whisk until lump free. Spoon into the tin and bake for approx 25 mins (until a skewer comes out clean.) Cool on a wire rack. Cut into squares (you can trim the edges off if preferred). Brush the tops with the curd (or warmed jam or sieved and warmed marmalade). Tip the coconut into a shallow flat dish and then dip the top of each square in the coconut. I havent tried it but different toppings ought to work too eg grated chocolate or sprinkles etc.
