Last night I made yet another delicious variation of Pie. This one is called a Farmers Pie. Although I made some variations as usual which may or may not have made it less of a farmers pie? I think the end result is all that matters though right? :) Paleo Farmers Pie Recipe from Paleo Comfort Foods: paleocomfortfoods/in-the-kitchen/farmers-pie/ Ingredients: 1 T. coconut 4-6 cloves fresh garlic, chopped 2 lbs. ground lamb 1 lb. ground grassfed beef 2 cups onions chopped 2 cups carrots, peeled and sliced 2 stalks celery, chopped 1 T. fresh rosemary, chopped fine 2 tsp. dried thyme 1 small can (6 ounces) tomato paste 2 T. balsamic vinegar 2 T. Worcestershire sauce** 6 cups Mashed Cauliflower Variations: I used 2 lbs of ground beef and no lamb, which makes the recipe a little smaller so i halved all of the rest of the ingredients. I also used No-mato sauce (nomato) instead of the tomato sauce because I cannot eat nightshades anymore. Finally i used orange cauliflower to add some color, I really wanted to try purple but I couldnt find it.. next time! Instructions: -Preheat oven to 350°F -Heat a large skillet over medium/medium-high heat. Add the coconut oil and once melted, add onion, carrots and celery and cook until onions are translucent -Add the garlic, rosemary and thyme and cook for another minute or two -Add in the lamb and beef and stir, combining with the veggies. Cook until the meat is browned.. -Stir in the tomato paste, balsamic, and Worcestershire and bring to a simmer. Simmer until any residual liquid is evaporated. -Pour meat/vegetable mixture into a 9″ x 13″ baking pan, and with a rubber spatula spread a layer of the Mashed Cauliflower over the top, forming a solid layer of the mash. -Bake for 20 minutes or until the mashed cauliflower is slightly browned on top (you can brown the top easier by broiling it for 2-3 minutes after it is done baking)
