Loaded Potato Salad-Paula Gati 5 lbs of red skinned potatoes, boiled and sliced 1/4 inch thick or cut in 1 inch chunks 3 cups of mayo 1 cup of sour cream 1 head of scallions chopped-reserve some for garnish 1 lb of bacon cooked, drained and crumbled-keep some on the side for garnish salt and pepper to taste Shredded cheddar to garnish cook potatoes,drain, cool and slice..no need to take skin off. mix mayo and sour cream and salt and pepper and scallions and bacon. toss with cooled potatoes re season if necessary. top with shredded cheddar.
