Mohit Balachandran .. ..everytime I m in a real hamlet-like dharmasankat whether to post or not on CS .. Like now -- its not ur typical Indian dish .. On top of that cornflour is not exactly makki da atta !! But it has Indian spices .. So please please caanfuzan door kar do !! Until then ... MUTTON IN CORNFLOUR GRAVY In the last three days I must have seen atleast 5-6 dishes that used cornflour. For me cornflour was what you use in desserts or what you cover stuff with before frying. Now you need to understand that my experiments in the kitchen have seen a 50:50 probability. Some have fallen majorly flat like once where I put too much kafir lime leaves in the soup and then to counter that added extra soya only to make the soup jet-black !! My hubby and sonny have great survivor instincts so they didnt say anything, quietly sipping until I took the first spoon and threw it out !! Since then many a days I get ragged on my kala-pani soup ... More goof-ups later .. But Coming back to this ..I approach every experiment with trepidation !! It could be a trail blazer or a KP soup .. No half measures there !! Lol!! But luckily this one was lick-the-plate-clean dish !! I live to goof another day !! 😜😜😃😃 500 g mutton with bones 3 large onions chopped thin 1 tsp garlic paste 2 tsp ginger paste 1 small tomato minced 1 tsp red chillies powder 2 tsp coriander powder 1 tsp cumin powder 1/2 tsp turmeric powder 1/2 tsp ground garam masala 1 tbsp cornflour mixed in half cup water Salt Fry the onions golden brown and then grind them without adding water. Heat oil and add the pastes. Sauté for a minute and add the dry spices except the garam masala. Sauté until the rawness is gone and add the tomato. Saute until the tomato is cooked and the oil is released. Add mutton and sauté well on high flame until the masala coats the mutton well. Add the ground onions. Stir well. Add 1 and half cups water and bring to a boil. Add the cornflour mix and salt. Bring to a boil and simmer until the gravy gets thicker. Add the garam masala. Pressure cook the mutton. Garnish with fresh coriander. Have it with soft fresh Ladi Pav. PS: if you find the gravy thin cook in open pan on high flame constantly stirring.
