Not long ago: This is where I toot my own horn with the cooking....Enchiladas with Guacamole. Boring right? HA! Use fake meat, beans, make my own enchilada sauce and guacamole, and add some plain Greek yogurt and salsa on top. Paired with a hoot of Sauza Silver and an amazing Mexican wine. Yes, Mexican wine. L.A. Cetto Petite Sirah, perfect for spicy mexican cuisine, and at $11.95 a bottle, I should keep a case in the basement.
