One of my young chefs is out of New York City. Next week we are going to compete in a regional competition. He is going to lead the team with a chicken dish prepared in the style of a confit, and then lightly bread with a parmesan crust and anointed with a light sauce of tart apple and Ameratto. The chicken will be mounted on a whipped potato flavored and enhance with rainbow chard.... I could have lead the team, but it is more fun to watch these young bucks make their chops.
