Organic Corn…GMO? We’re not sure. But today is the day. We are harvesting, shucking and processing our corn today. For example, the corn seemed to grow multiple root sets. Even above ground I found a few with four different sets of roots. Is it GMO? Not sure. We also had some corn grow a very long stem. Perhaps it’s from heavy watering and fast growth, we just aren’t sure. Most of the corn looks really good. A few ears of corn are a bit spotty and not full. And of course we also have to deal with the bugs and worms. However I was told by an expert and experienced gardener lately that you can prevent the worms from getting into your corn if you put 2 to 3 drops of mineral oil on the silks when they first start forming. We will try that next season. We harvest the corn when the silk ends die and they look like they are a good full ear. We leave a few of the smaller ears of corn on the stalk to see if they will finish up and grow to full size. Our grow time was from mid-May to the 1st of August. So about two and a half months to harvest. When we shuck the corn we find out how bad the worms are. It’s pretty common for them to destroy about 1 to 2 inches of the ear of corn. Once we shuck the corn we begin processing it. The easiest way of course is to freeze it. We harvested 72 ears of corn. We traded 20 ears of corn for pumpkins. When we process the corn, we cut off the bad parts, cut the corn off the cob with a knife and then set up some foil covered cookie sheets on which we spread out the corn kernels. We then put a lid or top over the cookie sheet and freeze it as separate kernels. This helps to avoid frozen clumps of corn and freezer burn. Once the corn is frozen we pour it into freezer bags for later use.
