Pork butt question for yall. I am smoking 2 big butts tomorrow for an event at school. This is the largest smoke I have done and it is my first with bone-in butts. They are rubbed and ready cooling in the garage (its freezing in NW Indiana). My question is whether I should wrap them to save the juices or if I should leave them open and put them in an aluminum pan? Collecting the juice is a little difficult in my smoker - see the picture. What I have done before is smoke them open until they get to about 145 internal and then wrap them and run the temp up to 205 for a while and then let them finish in a crock pot ( I cant stay out all night on Saturday since I pastor a church) What do you think about the aluminum pan idea?
