Primitivo. Its the first of 4 buckets of frozen grapes. Its been pressed to get it off the skins and as you can see, is settling nicely so I can remove the gross lees to. Its a bit of a lesson in fruit Vs juice/wine yield. That is 14 litres from about 25 litres of pulp at the start (actually theres a 750 wine bottle in the fridge as well as the last bit from the pressing). Of the 4 buckets, and looking at the stratification of floating skins, free run and yeast/seed/fruit flesh debris, I reckon this one will have yielded the lowest amount - Ill have to wait and see once Ive got the other batches pressed.......
