Few recipes to kick off your healthy week :) :) :) :) :) Chicken & Mushroom Egg-White Omelette Quantity Ingredients Suggested Brand 10 g soy cheese, cheddar Kingland 1 slice bread, multigrain, 100% gluten free (approx 39g each) 50 g chicken breast slices, roasted Average, All Brands 2 sprays cooking oil spray Average, all brands 3 egg whites (large egg) Average, all brands 1 sprig fresh chives Average, all brands 50 g chestnut mushrooms Average, all brands 3 cherry tomatoes, small (approx 10g each) Instructions : 1. Cut the chicken into thin strips, then slice the tomatoes and mushrooms. 2. Heat a 20cm non-stick frying pan over medium heat and spray lightly with cooking oil spray; add the mushrooms and cook, stirring constantly for approximately 1 minute or until starting to brown. 3. Add the tomato to the pan, cook for 30 seconds and then add the chicken for a further 30 seconds to heat through. 4. Remove mixture from pan and return the pan over medium heat, spraying lightly again with cooking oil spray. 5. Using a wire whisk or hand blender, beat the egg whites until light and fluffy. 6. Pour the egg whites into the pan (if making more than one serve, repeat the following steps for each serve). 7. When the omelette is slightly browned underneath, place the pan under a hot grill and cook the top until just set. 8. Remove the pan form the grill and add the chicken, mushroom and tomato filling to half of the omelette. Sprinkle with the cheddar cheese and fold over. 9. Serve with either a fresh or toasted slice of bread. Cottage Cheese, Peanut, Strawberry & Cinnamon Breakfast Muffin 10 g peanut butter, smooth Average, all brands 0.5 tsp ground cinnamon Average, all brands 33.5 g english muffin: wholemeal (1 muffin) Tip Top 40 g strawberries Average, all brands 40 g cheese, cottage, low-fat Instructions : 1. Toast Muffin half until golden 2. While muffin is toasting, cut strawberries into thin slices 3. When muffin is toasted, spread peanut butter. 4. Spread cottage cheese evenly over peanut butter 5. Arrange strawberries over the muffins and dust with cinnamon holeshotpt
