Recipe: Bucatini Carbonara INGREDIENTS: Handful of diced panchetta (italian bacon) Butter Heavy Whipping Cream Salt & Pepper Parmigiano-Reggiano Cheese Two Egg Yolks Bucatini Pasta Melt a tablespoon of butter. Add a handful of diced panchetta (Italian bacon). You can get this at your Italian market. First, render the panchetta until it’s crisy. Then, add a cup and a half of heavy whipping cream to the pan and let it reduce by half. Taste for salt, add crushed black pepper and a handful of Parmigiano-Reggiano cheese. Mix together very well. Now that the sauce is done, cook the Bucatinin (or you can use spaghetti) in lightly salted water. Whisk the two raw egg yolks in a bowl, drain the al dente Bucatini and add to the egg yolks. Then add the cream mixture to the Bucatini and egg yolks. Add more crushed black pepper and cheese to taste. Mix together extremely well like a salad. Plate it and add an egg yolk on top.
