Recipe From The Cove: Week 27 - Beef & Red Pepper Kabobs: What you need: 1 4/ cup balsamic vinegar 2 tbsp. olive oil 2 tbsp. water 1 pkt. (1.25oz) A-1 Original Marinade Mix 1 beef sirloin steak (2 lbs) ¾ inches thick, cut into 1 ½ inch chunks 4 red peppers, cut into 1 ½ inch pieces 4 cups hot, cooked long grain white rice 1 green onion, chopped 1 tbsp. chopped, fresh parsley Make it: Mix first 4 ingredients until blended; pour over meat in a shallow dish. Refrigerate 30 minutes to marinate. Heat grill to medium heat. Thread meat and peppers alternately onto 8 skewers. Grill 5 to 7 min. Or until meat is done and peppers are crisp tender, turning occasionally. Combine remaining ingredients. Serve with kabobs.
