Recipe for Beat The Heat-I do not know if regional specialities are still made in households. Raabdi for those who do not know this special dish for summers made in Haryana and bordering states of Raj. Stage1-Take a steel bowl or ceramic mix I heaped table spoon of Channey ka Atta(Gram Flour) and Two heaped spoons of Genhu ka Atta (Wheat flour) mix with 1 tea spoon salt and 300 gm of yoghurt and 250 ml water(Blend).Once blended keep this super mix in Direct Sun(8 am to 4 pm). Stage-2- Boil 1 ltr water once boiling mix the fermenting mix that was outside to this water...bring to boil and then simmer for 15 minutes once it boils. Stage-3- Once the super mix gets the slightly brownish colors as the flour is cooked...set it aside to cool down...and refrigerate. Stage-4-In the morning take this super mix and add 400 ml of yoghurt and 200 Ml of water with salt as per your taste and blend....and Drink...This is the Haryanvi Beer....best goes with onion and Roti from the day before...baasi roti........ Enjoy...I post this on fathers day as he taught me how to make it...Happy Fathers Day......
