STRAWBERRY-RHUBARB MUFFINS Ingredients: 1¾ cup white whole-wheat flour ½ cup sugar 2½ teaspoons baking powder ¾ teaspoon salt 2 egg whites, beaten ¾ cup low-fat milk 1/3 cup vegetable oil 1 cup minced rhubarb 1 cup chopped strawberries Directions: Preheat oven to 400 degrees Fahrenheit. Prepare a muffin tin with 12 paper liners. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in egg whites, milk, and vegetable oil. Mix until combined, do not over mix. Fold in rhubarb and strawberries. Fill each muffin tin ¾ full with muffin mixture. Bake for 20 minutes, cool and serve. Makes: 12 muffins
