STUFFED SQUID Meat filling: saute 2 cloves minced garlic and 1 onion then add 1/4kl of ground pork or beef until the meat is cooked and the water of meat is reduced. Season with 1tsp of soy sauce, 2tsps tomato sauce, pinch of pepper, salt and sugar. You can add magic sarap if you want. then add 1 carrot, 1 potato and green bell pepper all cut into very small cubes. Taste and adjust salt and pepper according to your liking. Set aside 1. Prepare: 1 egg beaten 1/4 cup calamares/tempura batter pinch of salt and pepper 1 tsp of water 1/2 cup panko bread crumbs 2 medium squid cooking oil 1. Clean the squid until white, then drain. (you can pat it with paper towel to completely dry) 2. Fill the inside of each squid with the prepared meat filling, leaving a little space to put back the head. Keep the head intact by using tooth picks or trimmed skewers. 3. Mix the 1 tsp water with the beaten egg, season with salt and pepper and add the batter. Mix them well to combine and batter to dissolve forming a slightly sticky batter. 4. dip the squid in the batter then roll in bread crumbs. 5. Deep fry in the heated oil over medium to high heat until golden brown. Do not overcook the squid. 6. Place cooked squid on a wire rack or platter with paper towel to let the oil drip. Best served warm with sweet chili sauce or mayo or just ketchup.
