STUFFING I have so many recipes for stuffing, some are complicated but this one is so easy, you will be able to make it in minutes. I prefer sage, but its terrible of overused. Be safe if in doubt use mixed herbs or herbs de provence Pick up a packet of breadcrumbs from your local retailer. They normally go for 1.99 in the supermarkets. Youll also need an onion, 2 garlic cloves, dried sage and butter. If you can, try use natural butter for this one, if not use a spread, I sometimes have to as well. Chop the onion (video coming soon) & garlic half the size of a ladies small fingernail will do. Slowly melt 150g of butter or spread in a pot then add the onions and garlic and leave for a few minutes. You want to onions to soften but not colour. Chefs tip.. If you are cooking with butter add a little drop of sunflower oil as it will stop the butter burning so quickly though not completely. Add the sage, mixed herbs or herbs de provence 1/2 teaspoon for each mug of crumbs, so measure it. Allow the flavour from the sage to infuse into the butter. Put the breadcrumbs into a large bowl then pour in the butter. Now, you can go a few ways here. (Great for beef, use thyme instead of sage) Add some chopped tomatoes from a tin. Or (Best) Add some juices from the roast as its cooking. Or Half a cup of water with half a veg stock cube dissolved into it. Or Make some bisto in a cup but not too thick. Add half a cup. Mix it really well and taste. Does it need a little seasoning (salt and pepper) or maybe some more herbs? Add as needed. I do not recommend any inexperienced cook to stuff the turkey. Use the juices from the roast (add 1/2 pint of water to the roasting tin for the last half hour of roasting and you will have loads, plus it helps keep the turkey moist)
