Sausage Balls 1 lb. ground venison sausage 2-cups Bisquick 2-cups shredded cheddar cheese Mix together. Pat out into balls. Bake at 375 degrees for about 10 – 15 minutes. (spray baking sheet with cooking spray) Crock Pot Loin Chops 2 pounds deer loin chops 1 cup ketchup ½ cup water 1 medium diced onion ½ cup packed brown sugar 1 dry onion soup mix Brown chops in skillet. Transfer meat to crock pot. Mix remaining ingredients. Pour over chops. Cook on low for about 4 hours or until tender. Crispy Loin Chops 1 lb. venison loin chops 1 cup milk 1 cup water ½ cup Texas Pete ½ T. black pepper 1 T. salt 1 egg 1 ½ cups of flour (approx) Mix together milk, water, and hot sauce. Should look like tomato soup. Place in bowl with chops for 1 hour in fridge. Whisk together egg and a little hot sauce mixture. In separate bowl mix flour, salt, and pepper. Dip marinated chops in flour mixture - then egg mixture – then back in flour. Fry in hot oil until brown on each side. About 3 minutes each. Hot Dog Chili 3 lb. ground venison 2 lb. lean ground beef 1 finely chopped onion ½ cup brown sugar ¼ cup Worcestershire sauce 1 bottle Heinz chili sauce Small bottle ketchup 1 pk. Mc Cormick’s sloppy joe mix Cook the meat in a pan and drain. Mix all ingredients together and let simmer for an hour. *Freezes well, I use Ball freezing jars* For anyone who is not from the south, we eat our hot dogs with mustard, chili, and slaw. This is the best chili recipe ever. Of course you must also make your cole slaw using Duke’s Mayo. Venison Stroganoff 1 lb. venison cut into small cubes 1 onion diced 2 cans cream of mushroom soup 1 can mushrooms (optional) 1 8 oz. sour cream 1 16 oz. pk. Egg noodles Garlic powder, salt & pepper to taste Season venison with salt, pepper, & garlic powder to taste. Saute diced onion and mushrooms in a large skillet with cooking oil. Add seasoned venison and brown. Do not overcook! When the venison is no longer pink add the soup. Simmer. While venison is simmering cook the egg noodles according to package directions. Drain noodles when cooked. Add sour cream to venison mixture. Mix together noodles and venison mixture. Serve hot! Meatloaf 1 lb. lean ground beef 1 lb ground venison 1 lb. ground venison breakfast sausage 3 eggs 3 slices of bread, finely crumbled ½ cup ketchup You can use 2 lbs of ground venison if you don’t want to use beef. Mix well. Place in rectangular baking dish. Bake at 350 degrees for about 1 hour. Top with ketchup or special sauce. Bake another 10 – 15 minutes. Let stand for a few minutes. Slice and serve. Special Meatloaf Sauce 1 cup ketchup ¼ cup packed brown sugar 2 T. Worcestershire Sauce Mix well. Spread over meatloaf. Gluten Free Meatloaf 2 lbs. ground venison 1 lb. ground beef 1 cup old fashioned oatmeal oats 3 eggs 1 very large onion finely diced ½ cup Ketchup 2 T. Mustard Mix well. Bake at 350 degrees for 1 hour. Top with ketchup or special sauce. Bake for another 10 – 15 minutes. Let stand for a few minutes. Slice and serve. Burger Casserole 1 ½ lbs ground venison 1 small diced onion 4 large potatoes, thinly sliced 1 can cheddar cheese soup Layer thinly sliced potatoes in casserole dish. Layer onion on potatoes. Layer precooked and drained ground venison on top. Mix soup with water (as directed on can) and pour on top. Bake at 350 degrees for 1 hour 15 minutes. Sloppy Joes 3 lbs. ground venison 1 large diced onion 2 T. cooking oil ½ cup brown sugar 1 cup ketchup 2 T. Worcestershire sauce Brown meat and onion in oil. Mix remaining ingredients in large pot and heat. Drain meat and onions. Add to mixture. Simmer 15 minutes. Serve on buns. (can add hot sauce to taste) Kristen’s Overnight Soup 1 lb. venison stew meat 1 can diced tomatoes 1 can petite diced tomatoes 1 can corn 2 onions, diced 1 can green beans 1 bag baby carrots 4 – 5 large potatoes, diced Fry meat and 1 onion until cooked. Place remaining ingredients in crock pot and stir. Add cooked meat & onion. Add a cup of water. Cook all night. In morning smash meat on side of crock pot until all pieces are shredded. Add a small amount of flour water mixture to thicken slightly. *We frequently eat this at The Butcher’s Block during deer season. It is an absolute favorite.* Shredded BBQ Venison 1 medium venison roast ½ cup brown sugar 2 T. Worcestershire sauce 1 cup ketchup ½ T. mustard Cook roast in crock pot until you can shred it with a fork. Remove meat and drain crock pot. Shred meat and return to pot. Mix remaining ingredients and pour over meat. Let simmer for several hours. This recipe is especially delicious when served with homemade slaw. (May need to add water or oil due to the leanness of venison) Bologna Roll Ups 1 lb. sliced venison bologna 1 8 oz. cream cheese spread Spread thin layer of cream cheese on slice of bologna. Roll up bologna and slice into 4 pieces. Secure each piece with a toothpick. Great appetizer! Cubed Steak & Gravy 2 T. Olive Oil 1 diced onion ¼ bell pepper, diced 4 venison cubed steak 1 pkg. dry onion soup mix 3 ½ cup water 2 t. all purpose flour Heat oil. Saute onions and pepper. Add venison. Cook until no longer pink. This does not take very long. Stir in soup mix already mixed with water. Remove cubed steak. Whisk flour in remaining mixture until thickened. Pour gravy over cubed steak. Great with mashed potatoes! Cubed Steak Variations Lightly bread cubed steak with flour. Pan fry until done. Easy and fast! Great on the grill as well. Taco Dip 1 lb. ground venison 1 pk taco seasoning 8 oz. cream cheese 1 jar mild salsa 1 can refried beans 2 cups shredded Monterey Jack Brown & drain venison. Add taco seasoning. (don’t premix it) Add refried beans and salsa. Cook together. In glass baking dish spread cream cheese. Spread meat mixture on top. Spread cheese on top. Bake in oven at 350 degrees until cheese is bubbly. Serve with bite size nachos. Cheeseburger Pie 1 lb. ground venison sausage 1 large diced onion 2 cups shredded cheese ½ cup bisquick 1 cup milk 2 eggs Spray 9” deep pie plate. Brown meat and onion and then drain. Spread meat in pie plate. Sprinkle cheese on meat. Mix remaining ingredients and pour over meat and cheese. Bake at 400 degrees until knife comes out clean. Quiche Muffins 1 ½ cup milk 3 large eggs 1 2/3 cup bisquick 2 ½ cups shredded cheese 1 T. dry minced onion 1 lb. ground venison sausage Preheat oven to 350 degrees. Brown and drain sausage. Mix milk, eggs, and bisquick. Add sausage, 1 ½ cups cheese and onion. Spoon into sprayed muffin tins. (I like to use the mini muffin tins) Sprinkle extra cheese on top. Bake. Let stand before removing from tins. Makes about 60 mini muffins. Burger Beans 1 lb. ground venison 1 large diced onion ¼ cup Grandma’s Molasses ½ cup ketchup 1 large can Pork & Beans Brown hamburger and onion. Drain. Add molasses and ketchup. Stir in beans. Simmer. Swedish Venison Tenderloin Slice tenderloin thin. Saute with small amount of garlic. Drain off any juices. Mix in 1 can cream of mushroom soup and 1 can gravy. (or you can make your own gravy) Simmer. Serve hot with rice. Golden Mushroom Loin & Apples 2 cans Golden Mushroom soup ½ cup water 1 T. brown sugar 1 T. Worcestershire Sauce Venison Loin 5 strips bacon 4 large Granny Smith Apples, sliced 2 large onions, sliced Stir the soup, water, brown sugar, Worcestershire sauce in crock pot. Wrap loin with bacon strips. (can fasten with toothpicks) Add the loin and coat with soup mixture. Top with apples and onions. Cover and cook on low for 8 to 9 hours. SLOW ROASTED STEW 3 pounds Venison Stew House seasoning (recipe follows) 1 Tablespoon Olive Oil 1 can Beef broth 1 cup red wine 1 Tablespoon Worcestershire Sauce 2 Tablespoons Minced Garlic 1 teaspoon dried oregano 1 teaspoon dried basil 1 8 oz. can tomato sauce Sprinkle Stew liberally with house seasoning. Coat the bottom of pan with Olive oil and sear the meat on all sides. Remove and place in a roasting pan. Add remaining ingredients together and heat until warm. Pour over meat. Cover and bake at 325 degrees for 3 hours. Remove and serve over bed of rice. House Seasoning Recipe 1 cup salt 1/4 cup black pepper 1/4 cup garlic powder (store in air tight container for up to 6 months)
