Sense Appeal is opening a second location on Lakeshore Blvd W and Third street, the only place in the city where you can try the latte science made – and it’s worth the trip. Sense Appeal is known for being Toronto’s only experimental coffee lab, originally tucked away in a stairwell at 96 Spadina Av. The second location is a 5,000ft2 lab, roastery, kitchen, school and sit down café. Co-owner Peter Adamo says that using lab equipment, such as rotary distillers and centrifuges, allow for a new level of innovation. “Before, we were stifled in our space. We couldn’t produce enough to meet the demand. Now, we’re only limited by our creativity.” Adamo envisions using the new space as an interactive education facility, somewhere knowledge is constantly in the making. “We are currently experimenting with creating our own line of specialty milks. Whereas generic ones can have an unwanted after taste to them, ours are modelled to perfectly complement our unique varieties of coffee.” The café’s inspiration is everywhere. The Master barista makes coffee through a custom pour over system with glass beakers, while the roaster cups and make notes on taste profiles at the bar. Scientific journals are on the bookshelves here, along with inspirational books modernist chefs. Co-owner Roberto Rota says the café has come a long way. “Renovations took a while,” says Rota. “But now that it’s finished, this location can bring a lot of coffee knowledge into the community.” Sense Appeal Lakeshore will be donating all of their revenue from the first week of business to two local charities; LAMP Community Health Centre and Daily Bread Food Bank.
