Sharing one of my absolute favorite dinners! I made these for my family & they loved them so much they said they wish restaurants made these so they could order them out all the time! Theyre baby portabello stuffed mushrooms! I usually make baked peppered chicken breasts to go with each serving of these. This batch I made I separated into four different servings after they were all cooked. I used three containers of Baby Bella mushrooms, 1 cup of plain fat free Greek yogurt, 1/4cup of reduced fat grated parmesan, 1/4 cup Italian breadcrumbs, 2 handfuls of spinach de-stemmed & chopped up tiny, roughly 1/2 cup of sundried tomatoes- I used ones that were spiced with garlic oregano (use the ones in the bag NOT the ones in jars- those are soaked in oils and have way too much added fat & calories), and to taste- garlic powder, pepper, & onion powder- I probably used about a teaspoon of each. I preheated the oven to 350 degrees, took the stems off the mushrooms nd washed them, put foil on a baking pan and sprayed it with cooking spray, laid the cleaned mushrooms hollow side up spread out on the foiled pan, used olive oil pam cooking spray to do a quick spray on top of the mushrooms before I filled them, then mixed all the ingredients in a bowl and filled the mushrooms. After I filled them I realized I still had a lot of filling left so I literally overflowed every mushroom until it was all gone ( ended up absolutely perfect like that! ) then I sprinkled pepper on top of everything. I put them in the oven for around 30 minutes (be careful theyre super slippery on the pan) and then I separated them into four equal servings and plated them with peppered baked chicken breasts and poured some balsamic vinegar on top of the plate! This is one of those things that once you have- you wish you had it every single night its so unbelievably good! And the best part....for the 1/4 batch of mushrooms its only 230 calories, 4g fat, 36g carbs, 21g protein, & 9g fiber! Seriously look up how horrible the nutrition information at any restaurant is for their stuffed mushrooms- and these even taste 10x better! Pair a serving with a 4oz baked chicken breast and your at 415 calories, 8g fat, 36g carbs, 56g protein, and 9g fiber for your dinner! Try making it for your family or make a big batch & meal prep the other 3 meals for later this week! Lemmie know what you think- my family was obsessed!
