Soft Pretzels ✿´¯`*•.¸¸✿ SHARE ✿´¯`*•.¸¸✿ Yields: 8 pretzels Dough: 2 1/2 cups almond flour (or can use all-purpose) 1 tsp granulated Swerve, Stevia or regular sugar 1/2 tsp sea salt 2 1/2 tsp Active instant dried yeast 1 cup warm water (or warm milk) Topping: 1/2 cup warm water 1 Tbsp baking soda 2 Tbsps unsalted butter, melted 2 Tbsps sesame seeds sea salt for sprinkling In a small bowl, combine warm water, sugar and yeast. Cover and let sit for five minutes, until the mixture is frothy. Meanwhile, combine flour and salt in a medium bowl. Once the yeast mixture is frothy, add it to the flour mixture and mix until a soft dough forms. Turn out onto floured surface and knead for five minutes. Form the dough into a ball and place in a greased bowl, cover and let rise until doubled (approximately 30 – 40 minutes). Once doubled in size, punch it down and divide into eight equal pieces. Preheat the oven to 400 F degrees. Line cookie sheet with parchment paper (or grease the pan). In a shallow bowl, combine warm water and baking soda. On a greased surface, roll each ball into a long rope and twist into a pretzel. Dip each pretzel into the baking soda and water mixture. Sprinkle sesame seeds on top and place onto the cookie sheet. Cover and allow to rise for another 10 to 15 minutes. Bake approximately 10 to 12 minutes, until they are golden brown on top. Once baked, brush them with melted butter and sprinkle with sea salt.
