Stuffed Peppers - its whats for dinner!!! :) If you are following the 21 Day Fix nutrition guide, I have included the container breakdown. 1 lb lean chopped turkey meat – 4 REDS •1 garlic, minced - FREE •1/4 onion, minced – ¼ GREEN •1 tbsp chopped fresh parsley - FREE •1 tsp cumin powder - FREE •1 cup fat free chicken broth - 1 YELLOW •1/4 cup tomato sauce (no salt added) – ¼ GREEN •1 1/2 cups cooked quinoa or brown rice – 3 YELLOWS •3 large sweet red bell peppers, washed – 3 GREENS Preheat oven to 350 degrees. Mix all ingredients except the red peppers in a large bowl. Cut all 3 peppers in ½ and discard seeds. Fill the meat mixture evenly amongst all 6 pepper halves. Place all pepper halves on a cookie sheet & place in preheated oven. Bake for 30 minutes. **Each ½ pepper = ¾ RED, ¾ GREEN and ¾ YELLOW. It’s really .66 for each color so I rounded up **
