The beloved CWA Christmas Markets are on from 4pm til 8pm tonight at the CWA Hall on Noble Street, Tennant Creek. To get you in the festive spirit, heres the amazing Pumpkin Christmas Cake recipe from the CWAs Helen Kempe: 500 g mixed fruit 1 1/4 cups brown sugar 1 tbsp golden syrup 125 g butter 1 cup apricot nectar 1 tsp bicarbonate of soda 2 eggs lightly beaten 1 cup cooked pumpkin, cold and mashed 1 cup plain flour, sifted 1 cup self raising flour, sifted Pre-heat oven to 160 degrees and grease and line a 20cm round cake tin • Bring to the boil mixed fruit, sugar syrup, butter and apricot nectar, stirring all the time and simmer gently for 10 mins. • Remove from heat, put into a large mixing bowl and add bicarbonate of soda (the mixture froths up) • Allow mixture to cool • Add eggs and pumpkin, beat till smooth. Then add flours and mix well to combine. • Place in tin and bake for 90 mins or until a skewer inserting in cake comes out clean. Baking time 90 mins (makes 16 slices or a tray of muffins/mini cakes)
