This is going to be one of the next dishes I cook. Camarones encocados, which is almost a reverse-play on paella. Its rooted in Peru, you take shrimp and rice and stuff and things and the essential ingredients are coconut cream and sofrito. I can make my own fresh coconut cream (that can turned me off) and sofrito is a combination of chilies and tomato and onion and spices. And rice, precooked here. I can do it better than this slick bastard and unlike him Ill add some subtle spices. The challenge is to get the coconut cream past Elaine, who apparently has an irrational fear of it.
