This past Sunday at Boston Local Food Festival, if you were just happening by, you might’ve thought you had fallen into an episode of Iron Chef. Community Servings’ very own Executive Chef Kevin Connors, along with Kitchen Manager John Ebersole, took home first place in the annual Seafood Throwdown. Were any of you there to see the action? The secret, seafood-themed ingredient turned out to be a Cusk (Cusk is a whitefish. Very clean, flaky, and mostly flavorless). The dishes were judged on four categories: taste, originality, presentation, and use of all parts of the fish. With the allotted time, one hour, Chef Kevin prepared a seared Cusk with a fresh tomato-fennel and Italian sausage stew, while Chef John focused on a baby eggplant canapé with an eggplant, red pear, and ginger apple chutney. Our team won by one point with a final score of 43-42. When asked about the Throwdown, Chef Kevin was quoted as saying, “Even if we had lost though, I was just glad to get to show so many people the kind of food we make for our clients everyday.”
