Todays #ChristmasCountdown is our awesome recipe for Santas Cookies! They are a delicious festive treat to enjoy over the happy holidays. Ingredients: - 3 cups almond meal - 2T cocoa nibs (or 70% dark chocolate) - 125ml walnuts, chopped - 125ml macadamia nuts, chopped - ¼ teaspoon sea salt - ½ teaspoon baking soda - 3T honey - 2T virgin coconut oil, melted - 1 teaspoon vanilla extract - 1 egg Directions: 1. Preheat oven to 180’C and grease a baking tray with butter. 2. In a large bowl mix together the dry ingredients together with a fork. 3. Add the cocoa nibs/dark chocolate and chopped nuts to the dry ingredeints and mix through. 4. In a separate bowl, whisk the wet ingredients together (honey, oil, vanilla extract, and the egg). 5. Pour in the whisked wet ingredients to the dry ingredients and stir until evenly mixed. 6. Using a 1 tablespoon spoon, spoon out balls of the dough and placr them on the baking sheet. 7. Bake for 10-12 minutes, until golden brown. Allow to cool for at least 5 minutes.
