Tonights dinner - Slow Cooked Pork Spare Ribs with Homemade BBQ Sauce These are the best ribs i have ever had in my life!!! Directions 4 pounds boneless pork spare ribs 3-4 cups homemade BBQ sauce 1 large onion - diced 1 teaspoon smoked paprika 1 teaspoon ground cumin 1/2 teaspoon ground mustard 1/2 teaspoon ground ginger 1/2 teaspoon onion powder 1/4 teaspoon garlic powder salt & pepper Remove rind from pork. Pat pork pieces dry and season with salt & pepper. Dice the onion & place on the bottom of the slow cooker In a small bowl mix together - smoked paprika, cumin, mustard, ginger, onion powder & garlic powder. Set aside. Heat pan with some oil and sear the pork on each side for about 30 seconds. Place seared pork into the slow cooker on top of the ribs. Once all pork in the slow cooker, sprinkle spice mix & 1 1/2 cups of BBQ sauce over the ribs. Give it all a stir so that spice mix and BBQ sauce spreads evenly over ribs Place lid on slow cooker and cook on slow for about 6 hours. Once cooked remove ribs from slow cooker and place on plate. Pour remaining BBQ sauce over ribs and serve. ------------------------------------------------------------- Homemade BBQ Sauce 1 cup organic ketchup or your own homemade ketchup 1/4 cup organic brown sugar or organic honey (you can even do 2 TB or each if you prefer) 1-2 tsp. organic black strap molasses 2-4 tsp. apple cider vinegar 2 to 2-1/2 tsp. ground mustard 1/2 tsp. salt 1/4 tsp. black pepper, or 1/8 tsp. white pepper 1 tsp. organic butter –butter helps make the sauce smooth and gives it a good mouth feel (can use coconut oil if you are dairy free) 1/4 cup water 1/4 tsp. onion powder 1/4 tsp. granulated garlic– granulated garlic has a more concentrated garlic flavor than does garlic powder 3-4 tsp. smoky paprika 1 tsp. (regular) paprika 1/8-1/4 tsp. cumin 1-2 TB of diced chipotle pepper for smokiness and heat alternatively you can use ground chipotle > approx 1/4 teaspoon (you can always add more if you need to) DIRECTIONS: Put the ketchup, water, and half the brown sugar and/or honey into a small saucepan over low heat. Stir to combine. Add the remaining ingredients (if there is a range use the smallest amount first) and stir to combine. Turn the heat up to medium low and let the mixture simmer for 10 minutes. Stir often. Give the sauce a taste and if desired add the remaining higher amounts of ingredients (such as more apple cider vinegar, more cumin, more ground mustard, more molasses). Let it cook for another 2-3, stirring frequently and taste again. Adjust the flavors if needed by adding more of any of spices listed above. Continue to cook for another 5-7 minutes until the sauce has reduced and thickened. Store in a glass jar. This will keep in the fridge for up to 10 days
