Tried something new tonight. Tory and I call these Taco Egg Rolls. Basically make up your taco meat with whatever spices you normally use. Now chop up all of the veggies you would use to top your normal tacos (we used cilantro, tomatoes and onions), add in grated cheese and some salsa and mix up while the meat is still hot. This melts the cheese. Using full size egg roll wrappers set in diamond shape formation I ran water all around the edges, added a tablespoon of the meat and then rolled up the pointy end closest to me, then the two sides then rolled that into the last end. Once they were all rolled up and all of the mix used up I then deep fried them for only about 20 seconds each. I didnt want them to get too oily. You can see that the inner layers are not fried so if you want them more crunchy then fry them longer. Drain on paper towels and serve with your sides. We chose a salad and tortilla chips. They are YUMMY. Jack ate 6 of them! (3 was just fine for me)
