Vegetarian Chicken Soup Take ½ cup each of yellow lentils (channa) , orange lentils (masoor) and black lentils ( mash). Rinse out and soak the lentils for at least 10 minutes. In a stock pot, sauté cumin, 1 inch piece of cinnamon, garlic and ginger in a Tbsp of ghee. You may add 1 cup of mirapoix (1/3 cup each of onion, celery and carrots) to the ghee. Add the lentils and put in 8-9 cups of water. Bring to a boil. Remove the foam. Let simmer for 45 minutes. Add salt and any other seasonings you would like. Builds you up from the inside out. If you have IBS, do not eat the lentils, just have the broth.
