Verse 58 salamun qawlan min rabbin raheem means:they will be greeted with the word Salaam (peace) from the Lord of mercy (Allah)The people being referred to are those who will be the People of Paradise on the Day of Judgement. The importance of this ayat is to signify the importance that the People of Paradise will have, meaning that they will be held so high that Allah (swt) will greet them with Salaams, SubhanAllah! People repeat this Ayat to show us the importance of working towards Jannah, and how will be treated when we get there. The repetition is there to emphasise the seriousness and importance of the line and to show us humans that even tho we are such low creatures, if we enter Jannah, Allah (swt) the most High will give us Salaams.The reason why people repeated it 3, 5, 7 times is because if we want to repeat, we are only supposed to repeat in odd numbers, according to a saying of the Prophet Muhammad (saw).And Allah (swt) knows best.
