Well, a couple weeks ago I bought a beautiful fresh, wild caught, red snapper from Mitsuwa Japanese market. I stored it in the freezer until today when I thawed it out to have for dinner. BUT, I didnt realize the fish was not scaled, nor gutted. Blah... ew.. gross. So today, I had a crash-course in learning how to scale and gut a fish. (ugh!) I didnt have time to get squeamish about doing it... so I just did it. Anyway, I squeezed fresh lemon juice on it, plenty salt & pepper, and coated with organic spelt flour. Then fried it up, steamed some fresh organic broccoli smothered in melted butter (made from cream of grass fed cows), and enjoyed the dinner. HOWEVER, I will never scale and gut another fish again... unless Im in emergency survival circumstances.
